Kendra Marquis, with her Creamy Beef 'n Veggies recipe!
The following seven categories are the grading criteria for which the judges voted on. Let's get down to the nitty gritty, fine details of this winning truck driver recipe...
The Creamy Beef n' Veggies recipe's preparation consists of grabbing handfuls of mushrooms, snow peas, broccoli, and roast beef, and throwing them in a Ziplock steamer bag. Do you have hands and a microwave? Great! Then you can prepare this meal in about 30 seconds flat.
Cooking time on the Creamy Beef n' Veggies was very minimal at just four minutes in the microwave. Four minutes - that's it! This is the perfect meal for a truck driver who's hungry, but on a time crunch.
The total cost of the Creamy Beef 'n' Veggies was also minimal, as all of the ingredients can be saved and reused for another meal. I recommend stocking up on these (and other groceries) at a nearby Walmart when you're stopped for a break or reset. You may be able to find some better prices and sales on the items, but here's a rough breakdown on what you might spend:
- Giorgio Mushrooms - Fresh Sliced Baby Bella - $1.99
- Oscar Mayer Carving Board Roast Beef - $3.99
- Marketside Sugar Snap Peas - $2.50
- Broccoli - $1.50
- Great Value Whipped Cream Cheese Spread - $1.99
- Ziplock Zip 'n' Steam Bags - $2.99 for 10
Total: $14.96 ( keep in mind you could get several meals/snacks out of this - sure beats paying that for one unhealthy meal eating out!)
The only materials you need in order to make this Creamy Beef 'n Veggies recipe are a microwave and a steamer bag! Can't get much better than that. The fact that this meal only requires one cooking tool makes it very easy for truck drivers to make on the road.

You'd think that having globs of cream cheese in this meal would make it pretty unhealthy, but after calculating everything out, it actually makes a pretty healthy meal! The whipped cream cheese, as opposed to regular, helps to keep the calorie content a little lower, and getting all those servings of veggies in there sure doesn't hurt either! Creamy Beef 'n Veggies is definitely a much better choice than a jumbo heart-attack-inducing combo meal from McDonald's.
Creamy Beef 'n Veggies sure tastes fresher than anything you'd find at a truck stop time or drive-thru. The protein and veggies in the meal makes it healthy and you don't feel bloated after like you do when you eat unhealthy fast food.
I sure wouldn't have thought mixing deli meat, cream cheese, and fresh veggies together! Combine the overall health factor of Creamy Beef 'n Veggies with the ease of preparation and you have a pretty original recipe on your hands. You definitely wouldn't find this at a truck stop or fast food restaurant.
